Easy Grilled Chicken Burrito Bowl With Lifestyle Influencer Alice Mungadzi

We asked Lifestyle Influencer Alice Mungadzi to share one of her favourite recipes for today’s Tasty Tuesday! 

Burritos can definitely be a guilty pleasure, especially when you have them at a fast-food place. However, just because they are deliciously unhealthy, doesn’t mean that they can’t be health as well. Making your favourite fast-food recipes at home is a healthier choice as you can control the portion size, the amount of sugar and salt, lastly you can substitute ingredients for healthier alternatives. Eating healthy should be fun and delicious, not bland and unpleasurable. This recipe is super easy to follow and most ingredients can be found at your local shop.

Ingredients:

For the Chicken:

  • Boneless chicken thighs or chicken breast (can also substitute for tofu)
  • Paprika
  • Lime
  • Garlic Powder
  • Salt and Pepper to taste
  • Chili Power (optional)

For the Bowl:

  • 1 Cup of rice (perfect substitutes for white rice can be brown rice or quinoa)
  • Black beans (can also use red beans or chickpeas)
  • Lime
  • Cherry tomatoes cut into quarters
  • ½ cup of corn
  • ½ Red Onion diced
  • 1 Jalapeno pepper (optional)
  • 1 Avocado (Sliced or Mashed)
  • Salt and Pepper to taste
  • Chopped cilantro or parsley to garnish

Step 1

Marinade the chicken and cook in a grill pan or grill over medium-high heat until the chicken is cooked through and no longer pink inside

Step 2

Once chicken is cooked, allow it to cool down and then slice

Step 3

In a small bowl, assemble your cooked rice mixed with lime, salt, pepper and cilantro, beans, corn and chopped tomato

Step 4

Place sliced chicken on top

Step 5

Add sliced or mashed avocado

Step 6

Garnish with cilantro and jalapeno (optional)

Step 7

Enjoy!
